Creamy Leek Soup
Ingredients (serves 6)
3 tablespoons butter
4 leeks, thinly sliced
2 large potatoes, peeled & cubed
2 (14-ounce) cans chicken broth
½ teaspoon salt
1/4 teaspoon pepper
2 cups half and half
1/4 cup sherry
Preparation
In skillet, melt butter and saute leeks until tender. In large saucepan, add potatoes, chicken broth, salt and pepper. Bring to a boil and immediately reduce heat. Simmer until potatoes are tender. Remove from heat and cool. Pour into blender and mix until smooth. Pour back into saucepan and add leeks with butter and half and half. Simmer for 20 minutes. Remove from heat and stir in sherry. Cool and freeze in a freezer bag or plastic container.
Reheating instructions
Defrost soup in refrigerator for 24 hours. Warm in saucepan over medium-low head for 25-30 minutes or until desired temperature is reached.

FYI – I only used 1 Tbsp of Italian seasoning in the butter for garlic bread.

meatballs were great and tons of sauce so perfect to add pasta.
i was out of town when JR had the sloppy joe’s and he said he ate them as though he was in a “sloppy joe eating contest.”
so they were good!
pork tenderloin with mango salsa was really good. it was nice to have a new taste rather than just the same ‘ol same ‘ol. nice combo.

We had the pork with the mango salsa- really good flavor and seems easy enough to make again. Like Kristine said, nice change.
The Potato Leek Soup was really yummy. I added asparagus the second day to the leftovers, it was great.
As always the potato, sausage and pepper dinner was great. Loved Everett’s Italian sausage again.

the black bean salsa chicken is really good! yes, i’m eating it right now! and it couldn’t have been easier to prepare. thank you for that! i put mine in the crock pot still partly frozen so i’m glad the directions said i could otw i wouldn’t have!
